In India, chicken market is one of the most unorganized sectors dominated by middlemen and more than 95 per cent of chicken marketed by live weight. At the retail level they are dressed under most unhygienic and primitive conditions which may sometime end up in mild to serious food poisoning due to microorganisms viz., Salmonella, E.Coli, Staphylococcus, etc. Thanks to our traditional cooking habits, we are safe. Nevertheless, the time consuming experience of shopping chicken in a unaesthetic atmosphere, the unsightly killing of birds, the soiled floor-with blood feathers, etc., the putrid odour, nauseating nature of water used for scalding, the overalls of the workers, etc., nearly force the consumers stop eating meat. In most developed and some developing countries, more than 95 per cent of chicken meat is being presented for sale in processed form, dressed in hygienic conditions.
